Hummus

Ingredients

  • 2 cups soaked chickpeas

  • 2 clove garlic, crushed

  • 4-6 tablespoons of water (depending on how creamy you like it)

  • 4 tablespoons extra virgin olive oil

  • 6 basil leaves

  • 2 tablespoons tahini

  • 1 fresh lemon juice

  • 1/2 teaspoon of cumin

  • 1 handful of parsley leaves

  • pinch of salt

Method

  1. Add all ingredients to the food processor and blend until smooth.

  2. When the mixture is fully combined and smooth, put it into a serving dish.

  3. Drizzle with some more extra virgin olive oil and decorate with a few whole chickpeas.

  4. Sprinkle with paprika and finely chopped coriander or parsley leaves (optional).
