Banana chocolate muffin

Ingredients

1⁄4 cup orange juice

4-6 of medjool dates pitted

6 tbs coconut oil

1 tsp vanilla extract

3 tbs honey or maple syrup

4 ripe bananas peeled

1 cup buckwheat flour

1 cup oat flour gluten free

1 tsp baking soda

1 tbs baking powder

1 tbs cocoa powder

Pinch of sea salt

Method

Preheat the oven to 180°C

Line a loaf pan with baking paper.

Put the orange juice, oil, dates vanilla extract and bananas in a food processor and process until smooth.

In a large bowl, combine all dry ingredients from the flour to salt. Add the banana mixture and combine until homogeneous. Fold in the blueberries or cacao nibs. Pour into the loaf pan and smooth the top.

Bake at 170 C for 25 – 30 minutes, or until a skewer comes out clean. Leave to cool and enjoy!
